Mango Madness Faluda

What is Faluda?

It is an Indian version of a cold dessert made with noodles. It has origins in the Persian dish Faloodeh, and is found across West, Central, and South Asia. Traditionally it is made by mixing rose syrup, vermicelli, and sweet basil seeds with milk, often served with ice cream.

Ingredients

Procedure

  1. Bring the milk to a boil. Turn off heat, add 1 tbsp sugar and mix well. Bring to room temperature and chill.

  3. Soak basil/subza seeds in water for 30 mins and allow to bloom. Set aside.
  4. Make faluda sev by boiling for 5-7 min (till they are edible soft) & then transfer the noodles to cold water and store in refrigerator

Layering Procedure

  1. Add 3 tbsp of mango puree, followed by 3 tbsp of subza seeds
  2. Add 0.5 cup milk.
  3. Add 0.5 scoop of Gallivant Mango Mawa ice cream and 0.25 cup of drained faluda sev / noodles
  4. Add 2 tbsp of mango purée and 2 tbsp of drained subza seeds
  5. Add 1 scoop of Gallivant Mango Mawa ice cream
  6. Garnish with pistachio slivers, almond slices & dried rose petals.
