Ingredients

- 1 pint Gallivant Thai Coconut Ice Cream
- 2-3 strawberries
- Handful of blueberries
- 1/2 cup neutral oil, such as sunflower or grapeseed
- 1/2 cup honey or maple syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup sliced almonds
Directions
- Preheat oven to 300°
- Cover baking sheet with parchment paper.
- Whisk together oil, honey, cinnamon and salt. Add oats and almonds in once mixed well.
- Spreads oats onto the prepared baking sheet. Bake for 20 minutes, stirring occasionally.
- Slices and dice 2 to 3 strawberries. Wash and dry blackberries and blueberries.
- Run a metal ice cream scoop under hot water. Place 2 to 3 scoops of Gallivant Thai Coconut Mawa Ice Cream in a cup or bowl.
- Top with granola, sliced strawberries, blueberries, and blackberries.
